Ingredients & Swaps
- Tortillas - we like to use small taco-sized flour tortillas, but you can use whatever size you like. You can plane use corn tortillas if you wish.
- Eggs - we go light on the scrambled eggs considering we like to use small tortillas, but if you use larger, burrito-sized tortillas, increase the number of eggs to fill those taquitos.
- Cheese - we opted for ripped-up marble cheese slices simply considering that is what we had on hand, but finger self-ruling to use any shredded cheese of choice. Monterrey jack would be a unconfined nomination here!
- Breakfast Sausages - We like pork breakfast sausage links with a hint of maple, but again, you use what you like. Chicken sausages are a unconfined swap here too.
How to make and hoke taquitos
- Cook eggs (scramble them) and sausage (according to the package directions) - set aside.
- Assemble taquitos adding egg, then sausage, then cheese, roll up, and place seam lanugo on a sultry sheet.
- Spray with oil and bake until crispy.
How to Freeze & Reheat
- For meal prep Sunday prep - follow recipe and torch taquitos. Allow the taquitos to fully tomfool surpassing placing a lid on the container. If you don't, the condensation will rationalization your taquitos to be soggy. To reheat, wrap in paper towel and microwave in 30 second increments until heated throughout.
- For Freezer prep - follow recipe and you can either torch them (if you want to just grab and go later), or leave them unbaked and place on a sultry sheet frozen. You will have to torch them for closer to 30 minutes if you are sultry from frozen. You can thaw and torch as well.
- Freezer Storage - wrap each FULLY COOLED taquito in foil and place all the taquitos into a zip top bag. The foil will prevent them from all freezing stuck together.
Yes! Heat air fryer to 400F and air fryer for well-nigh 6-8 minutes.
I wouldn't air fry these from frozen. The melt time needs to be increased and the tortillas will be too crispy.
You can torch from frozen, but it is weightier to thaw them. Torch time will be tropical to 30 minutes vs 10 minutes from thawed.
If you only microwave them, then no, they don't stay crispy. Try microwaving them in a paper towel and then finishing in a frying pan or air fryer for a crispy finish!
Corn tortillas need to be warm when you roll them. Heat them in the microwave for just a few seconds to prevent them from ripping as you hoke your taquitos.

Crispy Breakfast Sausage Taquitos
Ingredients
- 1 tbsp butter
- 3 eggs
- salt & pepper to taste
- 12 breakfast sausage links
- 1 cup shredded cheese
- 12 taco size flour tortillas
- olive oil spray
Instructions
- Preheat oven to 400°F
- On medium heat, melt butter in a frying pan. When pan is hot, scramble eggs and set aside. Add salt and pepper to taste.
- In the same frying pan, melt the breakfast sausages equal to the directions on the package. Set aside.
- Lay out a tortilla, and scoop egg onto it. Add the sausage, then cheese. Roll the tortilla as tight as you can.
- Place the rolled up taquitos seam lanugo on a sheet pan.
- Spray with olive oil spray (lightly!)
- Bake for well-nigh 10 minutes. You can moreover use the roaster to get crispy taquitos faster.
- Allow the taquitos to fully tomfool surpassing storing in a container or freezing them.
